I recently received some silicone bakeware as a gift and I’m having some problems with it. I haven’t used it before so I’m wondering if maybe I’m missing something. So far all I have used is the muffin pan which I washed thoroughly before using, per the instructions. After putting it in the oven, my house was filled with foul smelling smoke! I removed it from the oven and gingerly tested a small piece of a muffin and it had a distinctly chemical taste to it. I tried again about a week later thinking that maybe the pan just needed to be seasoned or something and I got the same results, albeit with less smoke. Is it possible for silicone bakeware to go bad? Should I just forget about cooking with silicone? I swear I’m not a horrible cook and I have heard such wonderful things about the benefits of silicone…Please help!

It was my fault (the burning). The recipe called for using a 8X8 pan for the brownies. I was so excited and bought some mini-muffin silicone bakeware. I used two of these silicone sets to make 24 mini-brownies (2-bite brownies).

Generic silicone bakeware protocol says that you do not grease the bakeware. So, I did not grease it. The recipe called for baking for 30-35 minutes at 350F. I did this. Man! The brownies were burned a good few millimetres from the bottom. The very bottom had a hard crusted crystallized coating. I am scared that this is silicone.

After much research on the ‘net, I have come up with solutions: 1) Changing the baking pan size caused this 2) Apparently, by switching to silicone, your baking time is reduced by 25%. I am fairly new to silicone. I used President’s Choice brand in this case. I am questioning the quality. By the way, I have "Smartware" silicone which has so far been good to me (I didn’t have the mini-muffin mold of theirs).
One more thing, I also read on the internet that silicone bakeware is "inert" and should not transfer to food. I was wondering if this is still true if you severely burn a food? Also, maybe the quality of silicone may not be good for the not-so-well-known brands (like "President’s Choice"?). ……. Or maybe I just BURNED the crap out of the brownies! And should try again. LOL I just want to make sure that that silicone did not get onto the food. I am tempted to take a picture of the bottom of the brownie.
